Edamame
 About Edamame
  Dadachamame is a common name for edamame varieties, which have been established in Yamagata prefecture of northern Japan since the late of Edo era. It is attractive in special aroma, sweetness, and deliciousness. A main ingredient of the aroma is 2-Acetyl-1-Pyrrolin as in aromatic rice. The sweetness and deliciousness are due to higher levels of sucrose, alanine and glutamine. The dadachamame varieties differ in these ingredients and the dates of harvesting, providing us various edamame varieties summer to early fall and supporting a traditional local culture in those areas. This database presents a list of characteristics for dadachamame varieties and landraces including eight lines available via HP.
